Spring has definitely sprung and, after several months’ worth of cosy hibernation fare, the time feels right for lighter, brighter plates. Tonight, Chef Anna offers up fresh fare featuring some of spring’s most highly anticipated ingredients. Join us for a culinary tiptoe through the tulips as we prepare:

Grilled asparagus salad, gribiche and pickled shallot mache salad

Roasted eggplant galette with warm chevre, caramelized onion bitter greens salad and vin cotto

Pan seared trout with beluga lentil and herb salad, citrus pressed yoghurt and dukkah

Rhubarb tart with sweet pastry dough, vanilla bean pastry cream and rhubarb compote
