Cooking with Beer – Ode to St. Pat’s, hands on cooking class, Chef Cari Reid

Cooking with wine has been a no-brainer for centuries. But beer? We’re getting there. The yeast in brew has long been recognized as just the thing for helping to batter fish and onion rings. But there are plenty of other reasons to crack one open for the win. For all those fruity, nutty, earthy, hoppy and bitter flavours, there’s a dish each will bring out the best in. Just make sure you buy double when you replicate these recipes at home – you’ll need some for sipping, too! Tonight – and just in time for St. Patty’s Day, we make:

Caramelized onion soup

Fish and chips with gluten-free beer batter, triple cooked fries, gribiche sauce and minted pea purée

Country Irish stew with Beau`s milk stout, herb and garlic dumpling and acorn creek root vegetables

Sticky toffee pudding
