Masterclass- The Whole Chicken, hands on cooking class, Chef Anna March

We’re taking “hands-on” to a whole new level with this incredibly unique and informative workshop. Chef Anna March will demonstrate the butchery of a whole chicken as you learn the ins and outs of technique and get some helpful tips on how to best use the various cuts. This menu was thoughtfully put together to showcase using and enjoying the whole chicken. Together, we’ll be making:

Brown chicken stock with mirepoix

Hearty roasted chicken soup, with vegetables, butter, thyme and barley

Chicken schnitzel – pounded and breaded chicken breast, pan seared, and butter basted for a golden crust with celery root remoulade, toasted Portuguese buns and pickled ramp crème fraiche

Braised chicken leg cacciatore, soft citrus polenta, roasted red peppers and crispy fried capers

Rhubarb and pecan crumble with sour cream sorbet
