North Africa (the Maghreb) is a region famous for vibrant flavours and exotic spices. While Canadians are likely familiar with its signature meat-based tagines and couscous dishes, the North African repertoire features many scrumptious meatless specialties using dates, olives, chickpeas, mint, cinnamon and cilantro. Vegetarian or not, you’ll delight in this evening’s menu:

briouats (savoury pastries) stuffs with potatoes and preserved lemon

grilled pepper and sweet onion salad

“pieds noirs” potato salad

medfouna (Berber-style calzone)

cashew bastilla (phyllo pastry)

Casablanca-style couscous, with chickpeas and vegetables

dates stuffed with almond paste, and mhalbi (custard with orange flower water)
