Poultry Fundamentals, fundamentals workshop, Chef Devin Marhue

This class is for anyone looking for more ideas and techniques when it comes to a perfectly prepared poultry dish. From deboning and cooking a whole chicken, to stock-making, and exploring inspiring sides, sauces and spices, Chef Devin will lead us through the ins and outs of poultry with several different preparations. Today’s menu features:

Parmesan Baked Chicken Wings I French onion dip

Olive Braised Chicken Thighs I preserved lemon I creamy mascarpone polenta I crispy chicken skin

Fried Chicken Drumsticks I pickled jalapenos I chimichurri sauce

Seared Chicken Supreme I muhammara sauce I dukkah spice
