South Indian Vegetarian, hands on cooking class (sold out), Chef Tara Rajan

With a hot and humid climate and abundant rainfall, south India offers an equally abundant supply of fresh fruit, vegetables and rice. Dishes here tend to be more vegetarian-friendly than other regions and centered on rice and rice-based dishes with sambar (soup-like lentil dish) and rasam (hot, sour soup), dry and curried veg and a host of chutneys. Join Chef Tara for a menu inspired primarily by south Indian cuisine and be introduced to new and exciting vegetarian flavours and dishes. We will be making Tamil Nadu favourites including:

Potato fritters (bondas) with spicy onion chutney

Black pepper lentil soup (rasam)

Lentil (moong dal) salad

Mixed vegetables with lentils and tamarind (sambar)

Spiced long beans

Chili potato roast

and, for dessert, vermicelli coconut pudding (payasam)
