February 18: Homemade Filled Pasta

The winter season beckons for slowing down, and for slow food. We look forward to welcoming you to tonight’s fundamentals and techniques class of homemade pasta class where the focus will be on “filled pasta”. This hands on tutorial, led by Chef Kyle will provide you with a step by step method on two variants of a stuffed pasta with homemade pasta dough. Guests will have the opportunity to attempt to simple folding techniques, while being shown alternate shapes and the endless possibilities. We will begin with a Italian canapé to welcome the group - Prosciutto & Parmesan Focaccia with preserved Fig Mostarda & Sherry Glaze, and move onto making our featured dishes: Charred Eggplant & Red onion annolinni with aged balsamic Beurre Noir, tarragon pesto, goat cheese and Mortadella & Ricotta Cappelletti. To end the night on a sweet note, guests will enjoy a special and traditional dessert - Certosino Gateau with candied fruits, plums, apricots, oranges, Burnt honey Glaze, Cocoa Budino.
