Chettinad chicken (chicken cooked with a spice paste we’ll make from scratch and simmered with tomatoes and more spices) | Tawa rice (south Indian fried rice)| Ginger pachadi (cooling yogurt condiment)

SIDE: Vadais (lentil fritters) with coconut chutney
