If you’ve never worked with phyllo pastry before, it might seem challenging and time-consuming.  Fear not!  Chef Tara will help demystify phyllo for you with a series of savoury and sweet recipes where we’ll fold and roll this versatile pastry into appetizers, a main dish and dessert.  Guests will enjoy a starter of lemon lentil soup, and then go into the kitchen to prepare four different phyllo dishes. One group of guests will make savoury ricotta phyllo cigars, and phyllo swirls stuffed with sweet potatoes, chickpeas and barberries (which we’ll serve with chef’s apple, fennel and arugula salad). Another group will prepare north African briouat triangles with potatoes, olives and capers, and a dessert of sweet phyllo milk pastry with fruit. Dietary considerations: this vegetarian menu contains dairy, nuts (pistachios) and gluten.
