Imagine the rich creaminess of cashews simmered with coconut. Imagine the bright flavours of lime and chili, and the smoky, spicy taste of charred vegetables and chilies. In this evening’s class, we’ll enjoy these flavours as we prepare some of chef Tara’s favourite Sri Lankan dishes. Guests will prepare a creamy cashew curry, charred snake beans with coconut, and a fresh carrot-lime condiment (sambol). We’ll serve these with chef’s steamed red rice. For starters, we’ll serve chef’s vegetable curry rolls with red onion chutney to start, and we’ll end the evening with an urban element dessert inspired by the evening’s theme.
