Join Pastry Chef Shirin Edarechi (of Sweet Patisserie) for a relaxed and informative afternoon devoted to elegant, gluten-free desserts that never compromise on flavour or texture. This workshop is designed to demystify gluten-free baking, offering approachable techniques and thoughtful guidance for desserts that feel both refined and deeply comforting. 

Together, we’ll explore how alternative flours behave in different applications, beginning with a honey-soaked almond flour cake finished with candied lemon peel — fragrant, tender, and perfectly balanced. You’ll also learn the fundamentals of baked custards through a classic crème brûlée, and master a timeless French chocolate mousse, celebrated for its simplicity and richness.

Chef Shirin will walk guests through flavour development, texture, and technique, showing how even seemingly intimidating desserts can become accessible and enjoyable to make at home. There will be a natural pause in the afternoon to allow baked items to cool, during which guests can enjoy a light mezze-style snack with cheeses and dips.

Participants will leave with the desserts they’ve prepared, along with new skills, confidence, and a deeper understanding of gluten-free baking — perfect for entertaining, special occasions, or everyday indulgence.
