Whatever the holiday your December table is set for, or simply for the joy of gathering with friends, Chef Tara Rajan’s vegetarian holiday menu offers a fresh, globally inspired take on festive dining. In this hands-on class, you’ll prepare a Moroccan vegetarian pastilla — crisp layers of phyllo pastry filled with a spiced, savoury blend of eggs and cashews — paired with Chef Tara’s sweet-tangy tomato jam. You’ll also make saffron and garlic-braised sweet potatoes and a bright orange and date salad that adds sparkle to the holiday table. The evening begins with a warming chickpea and couscous soup, enriched with harissa and a swirl of preserved lemon yogurt. Dessert, crafted by the UE kitchen, will carry the festive theme to a sweet and satisfying close. Contains gluten, nuts, eggs, and dairy.
