January 18, 5 p.m. – 7:30 p.m. @ Corner Peach kitchen
Step into the timeless world of French cuisine with Chef Chris Deraiche, for an evening that celebrates the dishes that shaped culinary history—and continue to inspire chefs around the world today. Warm, approachable, and rooted in technique, this class brings guests into the heart of French cooking. You’ll begin with a tasting of classic French canapés, including Chris’ signature gougères (freshly baked and impossibly airy), alongside elegant bites of ratatouille, beef tartare, and French onion soup. From there, you’ll move into the beauty of broth-making with a duck consommé, served with a delicate duck quenelle and root vegetables—an exploration of clarity, depth, and refinement. You’ll create a vibrant tuna Niçoise tart, a playful yet polished take on the Provençal classic. And to finish, Chris will guide you through a live demonstration of crêpes Suzette, flambéed and served tableside for a glowing, unforgettable finale. Whether you're new to French cuisine or ready to deepen your skills, this class offers a warm invitation to immerse yourself in the dishes—and the techniques—that continue to define great cooking.
