Our travels through Asia (by way of soup) take us tonight to southern India, where sambar – a traditional lentil and vegetable soup – is at the heart of many vegetarian meals in Tamil Nadu. To start the evening, Chef Tara will serve her potato cakes with spicy onion chutney. We’ll then go into the kitchen to prepare a south Indian vegetable sambar, which we’ll serve with rice, and a moong dal (lentil) salad with coconut. We’ll finish with Chef Tara’s payasam (a creamy pudding made with coconut milk and vermicelli). This vegan menu contains gluten and nuts.
