November 24: Holiday Vegetarian

Love the holiday season, but not a fan of heavy, meaty holiday meals? Maybe you’re inclined to try something different for your holiday menus, or maybe you want to incorporate more plant-based foods into your celebrations. Whatever your reasons, in tonight’s class you’ll discover some elegant and flavourful (vegetarian) ways to celebrate the holidays. We’ll make a de Puy lentil and pistachio-stuffed delicata squash, with maple glazed Brussels sprouts, and a quick cranberry sauce. We’ll serve these with chef Tara’s celeriac and fennel puree. For starters, chef Tara will serve her roasted parsnip soup with ras-el-hanout, and we’ll end the evening with chef’s candied ginger gingerbread with caramel sauce. Dietary considerations: this vegetarian menu contains gluten, wine and nuts. The dessert contains gluten and nuts.
