Liven up your summer dining with the flavours and textures of the Maghreb. Moroccan, Algerian and Tunisian cuisines all encompass a range of appetizer-style dishes featuring regional ingredients like harissa, chermoula, cured olives and spices that we’ll incorporate into a meze feast in tonight’s class.
Upon arrival, guests will enjoy Chef’s crispy briouats (vegetables in flaky pastry), and chef will demo making her north African chili sauce (harissa). Guests will then try their hand at making an array of appetizer-style dishes including lamb merguez patties, an Algerian “pieds noirs” potato salad, chermoula-marinated vegetable brochettes, and a classic spicy carrot, caraway and black olive salad. We’ll enjoy these with Chef Tara’s house-made Moroccan bread. We will end the night on a sweet note with chef’s orange-pomegranate salad and sweet yogurt.
